Prelab Formulate a hypothesis answering the central question posed in the introduction: Does tyrosinase activity vary with the type of potato it is isolated from? Explain why you chose the hypothesis you did, and how your hypothesis can be tested experimentally. The central question you are seeking to answer in this lab is whether or not the tyrosinase activity varies with the type of potato it is isolated from. To aid you in forming your hypothesis, remember that as shown in the I figure, tyrosinase activity ultimately results in the formation of the dark pigment melanin. In the figure below, different types of potatoes were cut at the same time and exposed to air resulting in the production of different levels of melanin. What does this suggest to you about tyrosinase activity in different potatoes? Do you expect tyrosinase isolated from different potatoes to generate the same or different amounts of dopachrome?
